Andreas Tancula Møller,
Executive Head Chef
Andreas Tancula Møller holds overall responsibility for aye aye's gastronomic profile and has an impressive background from renowned restaurants such as Søllerød Kro, Alchemist, and Restaurant Møntergade. Throughout his career, Andreas has distinguished himself as one of Denmark’s most talented chefs, a recognition reinforced by his victory in the country’s largest culinary competition, Sol over Gudhjem 2021. With a sharp eye for detail and an uncompromising approach to quality, he drives aye aye's gastronomic vision forward.
Christoffer Schwarz-Nielsen,
Wine Director
Wine is a central part of the experience when you visit aye aye, and we are proud to have our own in-house Wine Director. With care and expertise, Christoffer Schwarz-Nielsen selects the finest wines that not only complement our menus but elevate them to a sublime gastronomic experience.
Patrick Marcell Nielsen,
Head Chef
With a passion for Mediterranean cuisine and a deep understanding of ingredients, Patrick is dedicated to creating dishes that both impress and delight. With experience from renowned restaurants such as Nimb Terrasse, Marchal – d'Angleterre, and Koks in Greenland, Patrick brings a strong gastronomic background to aye aye. His time in Greenland, in particular, provided him with valuable insight into sourcing unique ingredients and working closely with local producers — an approach he now continues to ensure the finest dining experiences at aye aye.
Silviu Pencu,
Restaurant Supervisor
As Restaurant Supervisor at aye aye, Silviu plays a central role in ensuring that both service and atmosphere always live up to the restaurant’s high standards. With experience from Michelin-starred AOC and Restaurant Trio, he brings strong expertise and an international perspective to the team. Driven by a passion for guest experience and teamwork, Silviu helps bring aye aye’s vision of sublime social dining to life.
Bob van der Weerden,
Kitchen Manager
Bob brings more than 12 years of international experience to aye aye, with a culinary journey that began in the Netherlands and led him to Denmark. With experience from Michelin-level restaurants in the Netherlands and most recently from KILDEN in Tivoli, he has built a strong profile within fusion cuisine and classic bistro concepts. At aye aye, Bob helps shape the restaurant’s gastronomic vision – focusing on quality, teamwork, and uncompromising flavor.
Jonathan Tamstrup Christensen,
Restaurant Manager
Jonathan leads the daily operations, ensuring that everything runs seamlessly – from the restaurant’s atmosphere to the personal service at each table. With experience from top Danish and international restaurants such as MASH in Copenhagen and London, the Michelin-starred Formel B, Levi, and Aura, he brings solid expertise, leadership, and a strong guest focus to aye aye. Jonathan has even helped open new restaurants and contributed to earning a Michelin star in less than six months.Today, he uses his experience to develop the team and elevate every guest experience.
